Vin santo, literally sacred wine, is enjoyed nowadays as a sophisticated dessert wine, typically with cantuccini almond biscuits.
Following the strict
regulations of the Consorzio Chianti D.O.P., this superior vin santo is aged for a minimum of five years in chestnut wood barrels. Made from 75% malvasia and 25% trebbiane toscano grapes, the fruit is allowed to mature on the vine until late September, then hung from the airy rafters of La Pieve estate’s main hunting lodge, until the February snows.
For every 100kg of grapes harvested, 70 liters of juice is left after pressing and ultimately 30 liters of this precious vin santo is finally bottled. La Pieve produce about 2000 bottles a year.
The malvasia give this vinsanto its bouquet and aroma whilst its essential body and structure is from the trebbiane. This vinsanto has a very enjoyable complexity and leaves the palate clean.
By the way, much of what is sold under the name ‘vin santo’ is actually ‘vino liquoroso’, wine which has been heated in order to concentrate its sugars – a different product entirely and not to be confused with the real thing

Long Description: Ruinart's House style is medium-bodied, soft and smooth. Its bubbles are gentle but persistant. Its typically medium-bodied and caressing. It is a very luxurious Champagne and is purposely styled to just slip down the throat. This is due to the Champagne being ever so off-dry and lower in acidity; totally at odds with the searingly high acid style of Bollinger or Pol Roger. This makes it our most drinkable Champagne on the list. It is also popular with clients who suffer from acid reflux or don't enjoy the usual austere high acid style of Champagne. The House concentrates on the Chardonnay grape and Blanc de Blancs. This style of Champagne is also softer than the tighter and sinewy Pinot dominated brands.
