    CRISPY AROMATIC DUCK

    Ingredients 2 kg Duck Vegetable oil for deep-frying Cooking Sauce 6 cups Good stock 6 tablespoons Sugar 6 slices Fresh root ginger 10 tablespoons Soy sauce 4 tablespoons Yellow bean paste 6 tablespoons Rice wine or dry sherry 6 pieces Star anise 1/2 teaspoon Five-spice powder 1/4 teaspoon Pepper To Cook Clean the duck thoroughly and cut in half along the backbone. Mix the ingredients for the cooking sauce together in a large saucepan. Bring sauce to the boil and reduce heat. Place the duck into the liquid and submerge. Bring sauce back to boil and then simmer the duck gently for 2 hours. Remove from the cooking sauce and leave to cool. When required, heat the oil in a wok or deep fat fryer. When hot, place the duck gently in the oil and fry for 10-11 minutes. Drain well Remove bones and discard Shred meat into pieces using knife and fork >>>
