He has chosen a single estate Castel di Salve Montepulciano wine for his vincotto, literally cooked wine, and he describes it as a rich, slow cooked grape syrup. The fruit sugars of this renowned wine are pleasantly mellowed and refined, but not caramelised and, matured in oak casks, the flavours are complex and sophisticated. Enrico suggests trying the vincotto with cheese such as ricotta, grilled meats, ice cream or fruit, and it’s also delicious in salad dressings or marinades.     Ingredients 2 egg yolks 50g caster sugar 20g cornflour (sieved) 20g plain flour (sieved) 30ml full fat milk 4 tbsp Belvoir Elderflower Cordial Method Beat the egg yolks and sugar together. Heat the milk in a saucepan. Add the two flours to the egg and sugar mixture. Pour in the milk and stir. Add the Elderflower cordial. Pour the mixture back into the saucepan and heat stirring all the time until the custard thickens. It should have the consistency of whipped double cream. >>>
