A vegetarian Pate to rival any meat pate ! 3 Medium Aubergines 3 Red Peppers (Capiscum) 4 Garlic Cloves, crushed 6 tblsp Olive oil Sea salt and pepper 2 tblsp lemon juice 3 tblsp smooth Peanut butter ½ tsp cayenne pepper Handful of flat leaf parsley Put the (Eggplant) Aubergine and Peppers into a hot oven until the skin is blackening. The aubergine should take 45 minutes and the peppers a littel less. Let cool and the skin them, don’t worry if a little blackened skin is left. Ingredients 2 kg Duck Vegetable oil for deep-frying Cooking Sauce 6 cups Good stock 6 tablespoons Sugar 6 slices Fresh root ginger 10 tablespoons Soy sauce 4 tablespoons Yellow bean paste 6 tablespoons Rice wine or dry sherry 6 pieces Star anise 1/2 teaspoon Five-spice powder 1/4 teaspoon Pepper To Cook Clean the duck thoroughly and cut in half along the backbone. Mix the ingredients for the cooking sauce together in a large saucepan. Bring sauce to the boil and reduce heat. Place the duck into the liquid and submerge. Bring sauce back to boil and then simmer the duck gently for 2 hours. Remove from the cooking sauce and leave to cool. When required, heat the oil in a wok or deep fat fryer. HUNTERS PIE - BEEF STOCK

Hunters Pie 2 large onions, chopped 50g butter 750g minced venison 2 cloves garlic, crushed 2 tbsps plain flour 300ml venison or beef stock 1 tbsp tomato puree 3 tbsps Worcester sauce 1 tbsp fresh thyme leaves Salt and freshly ground black pepper 1 kg freshly mashed potatoes made with butter and milk 50g Lincolnshire poacher or Cheddar cheese Method: 1. In a large saucepan, cook the onion in the butter until soft and golden. 2. Add the venison and garlic and raise the heat so the meat browns a little, stirring constantly. Sprinkle in the flour, stir in well, then add the stock, tomato puree and all the remaining seasonings. Bubble gently for 15 minutes, season again to taste, then place in a shallow dish. 3. Spread the mashed potato on top and scatter the cheese over. Grill until golden brown and serve with a seasonal vegetable. Serves 4 Courtesy of Game to Eat >>>
