Olio Extra Vergine di Oliva (Single Estate) This my favorite one, on tasting this oil the first time I had no hesitation on whether I would buy it or not. Visiting their Olive trees estate was another sign of their professionalism and the quality of the products. The majority of their trees are in the old Gallipoli farm Li Sauli and the use of any herbicides, fertilizers and pesticides are strictly forbidden. The harvesting of the olive is still carried out in the most ancient system, Olives are harvested only using their hands when not fully ripe. Within few hours from the harvesting, the olives are milled in a large container by using millstones, the olive paste obtained in then distributed, through a dispenser, onto a natural fibre filters. The drawing of the Oil occurs by press ion, through the traditional pressing system, where the olives are pressed only once, without the use of heat Cold Press The early harvesting combined with the imminent crushing of the olives before fermentation starts permits to obtain an Olive Oil of extremely low acidity and rich in organoleptic properties. Type of Olives: Ogliarola & Cellina di Nardo' Pressing: First Cold Press Acidity: 0.35-0.5% >>>

CHOCCIE MOUSSE - SEED OIL

A divinely easy recipe to make and one that your guests will find hard to believe doesn’t contain lashings of cream! The Seed Co’s rapeseed oil replaces double cream in this recipe for a mousse that is delicious, light and very very chocolatey. Recipe fills 6 large glasses or 10 small ramekins and can be served on its own or with fresh seasonal fruits. YOU’LL NEED: 150g good, high cocoa content (70-85%), dark chocolate 140ml of The Seed Co. Rapeseed Oil 100g caster sugar 4 large free range eggs, yolks and whites separated A generous pinch of crushed sea salt (try www.cornishseasalt.co.uk) Plus Optional: 2 tablespoons of Amare+o (or your favourite liqueur) or 2 tablespoons espresso coffee (or 1 tablespoon of instant coffee dissolved in 1 tablespoon of water). METHOD: Prepara on me: 15 minutes Melt the chocolate in a bowl over warm water. Slowly stir in the rapeseed oil to the melted chocolate. In a separate large bowl, whisk the egg yolks with half the sugar until pale and creamy. Gradually add the chocolate and oil mixture into the whisked sugar and egg yolks, stirring gently. In another bowl, beat the egg whites until so peaks, adding a generous pinch of sea salt. Slowly add the rest of the sugar to the egg whites. Fold the egg white mix into the chocolate mixture with a metal spoon, in several batches. Add the optional espresso coffee OR liqueur and gently stir. Pour the mixture into 6 serving dishes and refrigerate for at least 4 hours. Dust with cocoa powder or icing sugar just before serving. >>>

Soleillou is based in the South of France and specialise in the 'burst of flavours' using herbs from the region. The secret lies in how they dry the herbs. All the herbs used in the products are hand-picked and then sundried for a period of three weeks thus retaining all the natural oils and aroma. A truly scrump)ous cake that’s quick and easy to make, with Rapeseed oil used instead of butter for a lighterand healthier cake. Recipe serves 8-12. YOU’LL NEED: 250g chopped walnuts 3 medium sized eggs 130ml The Seed Company Rapeseed Oil 150g caster sugar 225g self raising flour 1/2 tsp bicarbonate of soda 1/2 tsp baking powder 3 tsp instant coffee(dissolved in a 1 dessert spoon of hot water) For the icing: 6oz icing sugar 2 tbsp The Seed Company Rapeseed Oil 3 tsp instant coffee (dissolved in 1 dessert spoon of hot water) METHOD: Preheat the oven to Gas Mark 5, 180°C, 350°F. Place the flour, bicarbonate of soda, baking powder and sugar into a bowl and mix. Stir the oil in to the mixed ingredients. Gently whisk the eggs and add to the mixture together with the coffee and chopped walnuts. Stir the ingredients until the mixture is smooth and creamy. Lightly grease 2 x 7” cake tins using The Seed Company Rapeseed Oil. Pour the mixture into the greased tins, splitting it equally between the two. Bake in the centre of the pre-heated oven for 20-25 minutes. Once cooked remove from oven and leave to cool on a wire cooling rack. For the icing: Place all icing ingredients into a bowl and mix well. Once the cake has cooled spread the top of each half with plenty of icing. Decorate with more chopped walnuts. >>>

The family received an international award for their olive oil as early as 1903 at Crystal Palace, and in 2002 the Ercole Olivario awarded them a prize for their consistent high quality over the past 10 years. The De Carlo family farm and mill in the Conca di Bari in Apulia, a fertile basin where olives have flourished for centuries. Their new mill incorporates traditional milling with granite stone wheels, which they believe gives their oil a greater range and subtlety in flavour than a modern milling method. Their D.O.P. combines 70% ogliarolo and 30% coratina olives. Combined together in the stone milling, the ogliarolo gives a sweet, almondy base to the oil, whilst the coratina is more known for its strong and pungent flavour. Giorgio Franci is the author of these distinctly aristocratic oils. He mills the typical Tuscan olive varieties of Monte Nero, the Val d’Orcia and the Maremma hills in the family-run frantoio.
