CAULIFLOWER CHEESE

1 cauli broken into florets 40 g butter 40 g plain flour 350 ml milk 1 bay leaf Pinch of grated nutmeg 15 ml of favourite mustard 175 g of local hard cheese Salt and pepper Pre heat oven to 180 degrees c. Lightly butter a large oven proof dish. Boil the cauli florets for 6-8 mins until just tender. Melt the butter in a saucepan over a medium heat, add the flour and cook until just golden whilst stirring. Gradually add the milk stirring constantly until the sauce boils and thickens. Add the bay leaf, salt, pepper, nutmeg and mustard. Reduce the heat, and simmer for 5 mins then remove the bay leaf. Stir in half the cheese. Arrange the cauli in the dish, pour over the sauce and sprinkle over the remaining cheese. Bake for about 20 mins until bubbly and brown. >>>

SEGGIANO PECORINO EWES MILK CHEESE

SEGGIANO PECORINO EWES MILK CHEESE According to an eighteenth century reference, Tuscany, which is a hilly region, richly endowed with flavoured and fragrant pastures, is second to no other country for the excellence and delicacy of its fresh and dry cheese.’ The Tuscan pecorino does differ from the better known Sardo and Romano varieties, and is characterised by richer and more subtle flavours and textures. The Tuscan ewe, or pecora, enjoy greener pastures and produce a rich milk, particularly in the spring. The farmers of the region have developed their own particular traditions in the making and maturation of this cheese and the Tuscan pecorino is now a product of controlled origin. Ours is made in Seggiano from Monte Amiata ewes milk. Traditionally pecorino is eaten as a dessert cheese, combined with sliced pears and walnuts or with a locally produced chestnut or honeydew honey. It is also delicious with Seggiano Calabrian fig ball. Please note that all these cheeses are made with animal rennet. DOLCE The young pecorino, or dolce, is at its very best after spring rains. In the last months of the year milk production is at its lowest and the ewes’ milk is sometimes mixed with cows’ milk. The dolce is usually eaten at three to eight weeks, when it is still really creamy, mild and rich. Delectable with our Seggiano baked fig ball from Calabria. ROSSO or SEMI MATURED This pure ewes milk pecorino, sometimes referred to as rosso due to its colouring with tomato pulp, is matured for two to three months. This semi-stagionato cheese has a firm, smooth texture and a milder flavour than the nero. Try this or the matured cheese with our chestnut or woodland honeys. NERO or MATURED The mature pecorino, sometimes called nero due to the black colouration of the rind with olive pulp, is always a pure ewes’ milk cheese. Matured from four to six months, this is a classic dessert cheese, can be used grated instead of parmesan or shaved over dishes. Its flavour is strong, without being oversalted or pungent, and has a pleasantly subtle sour edge. Very pleasant with a glass of good red wine. TRUFFLE PECORINO A semi matured cheese with black truffle added to the curd, which gives it the famous aroma and flavour of truffle. Try it grated on mashed potato, or simply as an after dinner cheese. CHILLI PECORINO Semi matured with some chilli, or peperoncino added, to spice it up. >>>
