ALFALFA AND TOMATO SALAD

Lift a classic tomato salad with Aconbury alfalfa sprouts. Serve with sliced mozzarella and char-grilled bruschetta for an informal starter. 1 pack Aconbury alfalfa, or alfalfa and broccoli sprouts 500g ripe plum tomatoes 20g fresh basil leaves 2 tbsp virgin olive oil 1 tbsp balsamic vinegar Sea salt and freshly ground black pepper Roughly chop the tomatoes and tear up the basil. Combine with the oil, vinegar and seasoning, and set aside for an hour for the flavours to blend. Layer with the alfalfa sprouts, decorating with a few on top, and serve. >>>

KITCHADI RICE WITH MIXED SPROUTS

Like a comforting risotto, this Indian dish immediately became a firm favourite - Serves 4 Ingredients: 2 cups brown rice 1 pack Aconbury Mixed Sprouts 1 tbsp bouillon powder ½ cup cashew nuts ½ cup raisins 1 tsp cumin seeds 1 tsp fenugreek seeds ½ teaspoon black pepper 5 cups water 2 tbsp butter 2 tbsp fresh chopped coriander leaves yoghurt to serve Method: Melt the butter. Add the bouillon powder, cashew nuts, raisins, cumin and fenugreek seeds and black pepper, and sauté for 5 minutes. Stir in the rice and water, bring to the boil and simmer for 35 minutes. Mix in the sprouts and fresh coriander leaves and heat through. Serve with salads and yoghurt. >>>
